Abstract

It aims to provide an overview of the current research on sesame, focusing on its nutritional composition, health benefits, and potential applications. Sesame seeds are a good source of protein, dietary fiber, vitamins, and minerals, making them a valuable addition to a balanced diet. The oil extracted from sesame seeds is known for its high content of polyunsaturated fatty acids, particularly omega-6 fatty acids, which have been associated with various health benefits, including cardiovascular health and reducing inflammation. Sesame also contains a wide range of bioactive compounds, such as lignans, phytosterols, and tocopherols, which have been shown to possess antioxidant, anti-inflammatory, and anticancer properties. These bioactive compounds contribute to the potential health benefits of sesame, including improving lipid profile, reducing blood pressure, enhancing immune function, and preventing chronic diseases.
